Ingredients

  1. 1/2 c ~ Oil
  2. 2 tbsp ~ Lemon Juice
  3. 1/2 lbs ~ Olives
  4. 1/4 c ~ Pinoli
  5. 3 tbsp ~ Minced Garlic
  6. 2 tbsp ~ Mustard
  7. Basil
  8. Salt & Pepper

Instructions

  1. Toast the pinoli in oil and garlic
  2. Quarter olives, and chop basil
  3. Combine everything

Garlic Loaf

Ingredients

  1. 1 3/4 c ~ Hot Water
  2. 1/2 tsp ~ Yeast
  3. 3 c ~ Flour
  4. Salt & Pepper
  5. Minced Garlic
  6. Rosemary
  7. Thyme
  8. Poppy Seeds
  9. Sesame Seeds
  10. Sugar
  11. Oil

Instructions

  1. Bloom the yeast in the water with a little sugar
  2. Mix in the flour, and add a little oil
  3. Knead, then rest in an oiled bowl (covered) for around 14 hours
  4. Punch it down, and let it rest again for another 6 hours
  5. Preheat the oven to 400 F
  6. Knead in the garlic and spices
  7. Bake covered for 35-40 minutes, then bake uncovered until it's done

Peach Fennel Salad

Ingredients

  1. 1 bulb (with stem and fronds) ~ Fennel
  2. 3 tbsp ~ Oil
  3. 2 tsp ~ Vinegar
  4. Salt & Pepper
  5. 5 ~ Peaches
  6. 2 tbsp ~ Honey
  7. Red Pepper Flakes
  8. Chipotle
  9. Dill

Instructions

  1. Cut out the fennel heart, then very thinly julienne the bulb
  2. Chop the stalks, and mince the fronds
  3. Soak the stalk and bulb in the vinegar for around 10 minutes
  4. Dice the peaches
  5. Mix everything together
  • Add heavy cream, cheese, peppers, green beans, and top with butter and bread crumbs for a casserole with the leftovers

  1. 1 c ~ Rice
  2. 4 tbsp ~ Chicken Stock
  3. 8 oz ~ Diced Tomatoes
  4. 1 c ~ Frozen Corn
  5. 1 c ~ Frozen Green Beans
  6. Paprika
  7. Salt & Pepper
  8. Parsley
  9. Oregano

Instructions

  1. Cook the rice as directed, just add in the rest of the ingredients

Garlic Mashed Potatoes

Ingredients

  1. 5-6 ~ Potatoes
  2. 3 tbsp ~ White Wine
  3. 2 tbsp ~ Butter
  4. 1/4 c ~ Heavy Cream
  5. 2 tbsp ~ Flour
  6. 3 tbsp ~ Chicken Stock
  7. Minced Garlic
  8. Salt & Pepper
  9. Green Onions
  10. Nutmeg
  11. Oregano

Instructions

  1. Cut the potatoes into more or less even surface area
  2. Put into cold water with salt and bring to a boil
  3. In a separate pot, make a roux with fragrant garlic, flour, and butter
  4. Add in wine and cream, then reduce
  5. Add salt, pepper, chicken stock, and green onions
  6. Heat until the mixture rises then remove from heat and add nutmeg
  7. Strain potatoes when they are fork tender
  8. Mash the potatoes, gradually mashing in the cream mixture until you like the consistency

Sun-dried Tomato Pasta Salad

  1. 1/4 c ~ Sun-dried Tomatoes
  2. 1-2 ~ Cucumbers
  3. 1/2 c ~ Crumbled Feta Cheese
  4. 1/2 c ~ Grated Parmesan
  5. 2 tbsp ~ Oil
  6. 1/4 ~ Onion
  7. 2 tsp ~ Apple Cider Vinegar
  8. Appropriate Pasta
  9. Salt & Pepper
  10. Heavy Cream
  11. Paprika

Instructions

  1. Cook the pasta
  2. Cut the cucumber into slices, then quarters
  3. Mix everything in a bowl and serve cold

Wonton Spanokopita

Ingredients

  1. 1 pkg ~ Wontons
  2. 1 lbs ~ Ricotta
  3. 16 oz ~ Spinach
  4. 1 tbsp ~ Minced Garlic
  5. Oil
  6. Salt & Pepper

Instructions

  1. Cook the spinach with oil, garlic, and salt & pepper
  2. Drain, pressing out liquid
  3. Mix in ricotta
  4. Put a spoonful on a wonton, wet the edges with water, and fold
  5. Spray with oil and air fry for 8 minutes at 375 F

Risotto (American)

  1. 1 c ~ Rice
  2. 2 tbsp ~ Wine
  3. 1/4 c ~ Heavy Cream
  4. 2 tbsp ~ Butter
  5. 1/4 c ~ Parmesan
  6. Green Onions
  7. Salt & Pepper
  8. Chicken Stock

Instructions

  1. Cook the rice
  2. Separately heat the cream, wine, butter, cheese, and salt & pepper
  3. Mix into the rice, then garnish with green onions

Puntarelle Salad

  1. 1 ~ Lemon (zest and juice)
  2. Minced Garlic
  3. Salt & Pepper
  4. Puntarelle
  5. Oil
  6. Parmigiano

Instructions

  1. Cut the stems and soak the chicory in luke warm water
  2. Drain the water and toss the rest of the ingredients

Braided Pesto Bread

Ingredients

  1. 3 c ~ Flour
  2. 2 1/4 tsp ~ Yeast
  3. 2 tsp ~ Sugar
  4. 1 1/4 c ~ Warm Water
  5. 1/4 c ~ Oil
  6. 1 tbsp ~ White Vinegar
  7. Pesto
  8. Salt

Instructions

  1. Bloom the yeast in water and sugar
  2. Separate the water into halves and add vinegar and flour to one half
  3. Add in salt and then alternate oil with the rest of the water
  4. Let rest for 2 hours, covered
  5. Treat it like a cinnamon roll with pesto
  6. Slice the mega roll lengthwise, press it down, and cut the halves again
  7. Braid the resulting strips and brush it in oil
  8. Let it proof again, then bake for 5 minutes at 400 F and finish (2 minutes) at 350 F

  2. 1 c ~ Arborio Rice
  3. 2 tbsp ~ Pinoli
  4. 1/2 c ~ Mozzarella
  5. 1/2 c ~ Fontina
  6. 1/2 c ~ Parmigiano
  7. 2 ~ Eggs
  8. 1 1/2 c ~ Breadcrumbs
  9. Parsley
  10. Salt & Pepper
  11. Oil
  12. Butter
  13. White Wine

Instructions

  1. Make risotto and add breadcrumbs
  2. Shape into balls, dredge, and freeze
  3. Fry 'till golden

Baguette

Ingredients

  1. 1 1/2 tbsp ~ Yeast
  2. 2 tbsp ~ Honey
  3. 3 1/2 c ~ Flour
  4. 1 1/2 c ~ Warm Water
  5. Oil
  6. Salt
  7. Cornmeal

Instructions

  1. Make a Poolish the night before
  2. Bloom the yeast and honey with 1/2 c of water
  3. Incorporate flour, then mix in the rest of the water and salt
  4. Knead until smooth, then cover and rest in an oiled bowl for 25 minutes
  5. Divide into two loaves, and fold like an envelope until you have the right shape
  6. Coat the bottom in cornmeal, then place on a baking sheet
  7. Score the top and let it rest (covered)
  8. Preheat to 450 F with a second rimmed sheet under the rack you're going to use
  9. Bake till done (~15 minutes) with ice on the second sheet to steam

Mango Salsa

Ingredients

  1. 16 ~ Shrimp
  2. 4 ~ Tortillas
  3. 1 ~ Mango (medium)
  4. 3 tbsp ~ Cilantro
  5. 2 tsp ~ Lime Juice
  6. Red Pepper Flakes
  7. Salt
  8. Chipotle
  9. Oil
  10. Avocado
  11. Red Onion
  12. Cumin

Instructions

  1. Devein, pool, and take the tail off the shrimp
  2. Cube the mango, chip the cilantro, and mash the avocado
  3. Season the shrimp and cook
  4. Toast the tortillas, and chop the onion
  5. Mix some onion, avocado, and cumin with lime juice
  6. Combine everything and top with the avocado mixture

Sour Cream & Chive Dinner Rolls

Ingredients

  1. 5 1/3 c ~ Bread Flour
  2. 1/2 c ~ Milk
  3. 1 1/2 tsp ~ Yeast
  4. 1 c ~ Sour Cream
  5. 1/4 c ~ Sugar
  6. 2 1/4 tsp ~ Salt
  7. 3 ~ Eggs
  8. 1 stick ~ Butter
  9. 1/2 c ~ Chives (chopped)
  10. Flakey Salt
  11. Pepper

Instructions

  1. Make a tangzhong with milk, 1/3 c flour, 1/2 c water (stirring constantly)
  2. Remove from heat, then (separately) warm 2 tbsp of milk and bloom the yeast
  3. Mix the tangzhong with 2 eggs, 4 tbsp butter, 5 c flour, and the yeast mixture
  4. Take a shaggy dough and knead until tacky (10 min)
  5. Rest in an oiled bowl for 1 - 1 1/2 hours covered
  6. Butter a 9x13, and punch the dough
  7. Form balls, cover and rest in the dish for 45 minutes
  8. Preheat to 375 F, and use the last egg to wash the balls
  9. Salt and pepper, then bake for 25 - 30 minutes

Salmon Zucchini Pastry

Ingredients

  1. 16 oz ~ Salmon
  2. 2-3 ~ Zucchini
  3. Puff Pastry
  4. Salt & Pepper
  5. Oil
  6. Thyme
  7. Mustard
  8. Mayo

Instructions

  1. Thinly slice the zucchini and toss in oil, salt & pepper, and thyme
  2. Season salmon, give it a quick sear, and shred it
  3. Mix the mayo, mustard, and salmon
  4. Grease a 9x13, and lay down a couple layers of pastry
  5. Coat with salmon, then layer the Zucchini over it
  6. Add a couple more sheets of pastry, and make at 375 F for 20-25 minutes

Quiche Lorraine

  1. 1/2 ~ Chopped Onion
  2. 4 ~ Eggs
  3. 1 1/2 c ~ Whole Milk
  4. 1 c ~ Sharp White Cheddar
  5. 1 ~ 9" Pie Crust
  6. Oil
  7. Salt & Pepper
  8. Thyme
  9. Marjoram
  10. Tarragon
  11. Basil
  12. Rosemary
  13. Fennel
  14. Lavender

Instructions

  1. Preheat to 350 F
  2. Brown onions with salt
  3. Mix everything and bake in the curst until the middle sets but jiggles slightly (45-50 min)

Pumpkin Focaccia Monkey Bread

Ingredients

  1. 100 g ~ Oats
  2. 100 g ~ Bread Flour
  3. 300 g ~ AP Flour
  4. 400 g ~ Warm water
  5. Olive Oil
  6. Salt & Pepper
  7. Yeast
  8. Honey
  9. Pumpkin Puree
  10. Minced Garlic
  11. Smoked Paprika
  12. Cayenne
  13. Sage

Instructions

  1. Bloom the yeast in warm water and honey
  2. Put the oats in a blender until a powder forms
  3. Mix all of the flours, salt, and paprika
  4. Mix in the water with some oil
  5. Pull and knead until everything is incorporated
  6. Cover and let sit on the counter for 2 hours
  7. Punch down and let rise in the fridge overnight
  8. Pull out of the fridge and in a different bowl mix oil, pumpkin, and sage
  9. Butter and flour a bundt pan and layer balls of dough with the puree mixture
  10. Cover and let rise on the counter for 4 hours
  11. Bake covered at 425 for 45 minutes, then finish uncovered
