Vodka Cream

Ingredients

  1. 8 oz ~ Crushed Tomatoes
  2. 1/2 c ~ Vodka
  3. 1 tbsp ~ Minced Garlic
  4. 2 tbsp ~ Butter
  5. 1/2 c ~ Heavy Cream
  6. 1/4 c ~ Parmesan
  7. 1 tbsp ~ Granulated Sugar
  8. Red Pepper Flakes
  9. Cayenne
  10. Oregano
  11. Oil
  12. Salt
  13. Black Pepper

Instructions

  1. Melt the butter, then add garlic and spices with a splash of oil
  2. Add the vodka and reduce about half
  3. Add in tomatoes, and simmer (covered) until it feels right
  4. Stir in the cheese and cream

Honey Jack BBQ Sauce

Ingredients

  1. 3 tbsp ~ Vinegar
  2. 1/2 c ~ Pureed Tomatoes
  3. 2 tbsp ~ Sugar
  4. 1/4 c ~ Brown Sugar
  5. 1/4 c ~ Honey Jack
  6. 1/4 c ~ Chicken Stock
  7. Chili Powder
  8. Chipotle

Instructions

  1. Heat the jack with the sugars until it starts to reduce
  2. Stir in the tomatoes and seasonings, and simmer until the sauce is complete

Ingredients

  1. 1 c ~ Heavy Cream
  2. 1/2 c ~ Parmesan
  3. 3 tbsp ~ Butter
  4. 1/4 c ~ Wine
  5. 3 tbsp ~ Flour
  6. Parsley
  7. Salt & Pepper
  8. Minced Garlic

Instructions

  1. Make a roux
  2. Reduce in the wine and garlic
  3. Add in cheese and cream
  4. Add in parsley, salt & pepper, and parsley
  5. Froth or heat until it starts to expand
  6. Let it rest in the fridge for 6 hours before using it

Saffron Cream

Ingredients

  1. 1 tbsp ~ Butter
  2. 1/2 ~ Diced Shallot
  3. 3/4 c ~ Heavy Cream
  4. 1 tbsp ~ Lemon (Juice and Zest)
  5. 1/4 c ~ Parmesan
  6. 1/4 tsp ~ Vanilla
  7. pinch ~ Saffron
  8. Salt & Pepper
  9. Chives

Instructions

  1. Melt the butter and soften the shallots in it with the saffron, zest,
  2. Add in the cream, salt & pepper, lemon juice, and simmer
  3. Stir in vanilla and cheese
  4. Finish with chives

Bang Bang Sauce

Ingredients

  1. 1/4 c ~ Chili Sauce
  2. 2 tbsp ~ Mango
  3. 1 1/2 tbsp ~ Honey
  4. 1 tbsp ~ Sriracha
  5. Chives

Instructions

  1. Chop chives, and mix everything together

Rosé Sauce

Ingredients

  1. 1/4 c ~ Rosé
  2. 2 tbsp ~ Butter
  3. 1 tbsp ~ Minced Garlic
  4. 15 oz ~ Tomatoes
  5. 2 tbsp ~ Lemon (Juice & Zest)
  6. 2 tsp ~ Tarragon
  7. 4 tbsp ~ Heavy Cream
  8. 1 tsp ~ Thyme
  9. Oil
  10. Salt & Pepper

Instructions

  1. Mince garlic, chop tarragon, zest and juice the lemon
  2. Dice the tomatoes
  3. Over medium heat, melt the butter and heat the garlic until fragrant
  4. Add in tarragon, oil, and rosé
  5. Reduce, then add in the rest (seasoning to taste)

Fish Sauce Caramel

Ingredients

  1. 1/2 c ~ Fish Sauce
  2. 1/2 c ~ Sugar
  3. Lime (zest & juice)
  4. Thai Chili's
  5. Minced Garlic
  6. Oil

Instructions

  1. Chop the chili's, heat the garlic in oil with the chili's until fragrant
  2. Add sugar and make an almost caramel
  3. Add in fish sauce and reduce till nappe

Crushed Artichoke Cream

  1. 1 can ~ Artichoke Hearts
  2. 2 handfulls ~ Spinach
  3. 1 handfull ~ Mushrooms
  4. 1 ~ Lemon (zest & juice)
  5. Red Pepper Flakes
  6. Salt & Pepper
  7. Tarragon
  8. Parsley
  9. Minced Garlic
  10. Butter
  11. Wine
  12. Heavy Cream

Instructions

  1. Sautee mushrooms with butter, garlic, and wine
  2. Add in artichoke hearts, spinach, parsley, and tarragon
  3. Combine everything except for the lemon juice
  4. Remove from heat and store overnight
  5. When reheating next day, add in lemon juice

Peach BBQ Sauce

  1. Crushed Tomatoes
  2. Brown Sugar
  3. Peach Cheong
  4. Olive Oil
  5. Salt & Pepper
  6. Cayenne
  7. Vinegar
  8. Chicken Stock
  9. Minced Garlic
  10. Smoked Paprika
  11. Cumin

Instructions

  1. Make the sauce, you'll be fine

Tonkatsu Sauce

  1. 1/4 c ~ Sake
  2. 1/4 c ~ Mirin
  3. 1/4 c ~ Water
  4. 1/4 c ~ Miso
  5. 2 tbsp ~ Sesame Paste
  6. 2 tbsp ~ Sugar
  7. Salt

Instructions

  1. Reduce the sake, mirin, and water a little
  2. Remove from heat and add in the rest
  3. Season otherwise to taste (red pepper, ginger, whatever you're feeling)
